I would like to share a recipe from The Kid – Friendly ADHD & Autism Cookbook. I have used this recipe several times and will be using it in reviews of a couple of kitchen items soon. The batter is thin, but I found that if you pour it onto a hot skillet slowly, you will get thicker pancakes. My family really loves these, I hope you do too. Low-Carb, No-Sugar Pancakes
1 egg
2 1 cup liquid (water, rice milk, or juice)
1 tablespoon oil
1 teaspoon vanilla
1 cup GF flour mixture (almond, buck-wheat, and rice or millet)
1 teaspoon baking powder
Combine the wet ingredients. In a separate bowl, combine the dry ingredients. Add the dry mixtures to the wet mixture. Blend thoroughly. Batter should be thin. Cook on heated skillet, flipping once.
